The craft that started it all.
The French Laundry · Yountville, California
"There’s always more to learn. You never stop learning in this industry."
Wine country · Sonoma County, California
David likes seeing how other people do what they do. Restaurants, wineries, distilleries, farms—anything where people take their craft seriously.
He appreciates the new and creative, but he also respects a classic done really well.
Sometimes the simplest things are the hardest to get right.
St. Patrick's Day · Cork, Ireland
When David travels, he likes getting beyond the tourist experience. He looks for the local places, traditions and people behind the food and drink.
He especially enjoys experiencing something where it belongs—local food, a long-standing tradition, or even St. Patrick’s Day in Ireland. For him, those experiences are part of getting to know a place and the people who live there.
FOOD IS PERSONAL
Food has always been more than a profession for David. It is one of the ways he connects with and cares for people.
While traveling in California, a close family friend who was nearing the end of her life told him, “You still haven’t cooked for me.” David changed his plans, came back, and made the chile verde she requested.
She loved it.
It was the first meal he cooked for her. It would also be her last.
Some of David’s favorite meals are still the simplest ones—cooking outside at home in Hawaiʻi.
No chef coat.
No fancy kitchen.
Sometimes, no shirt.
Just slippers, a grill, good food, good drinks and good people.
